Curried Mussels with Jalapeno Ale- Pen Cove mussels sauteed with red curry paste, sesame oil, coconut cream and ginger.

Cheese stuffed steak bites- Top sirloin stuffed with dragon tail cheese from Cascade creamery in Leavenworth. Dipped in tempura and deep fried. Served with a horseradish honey sour cream sauce.
Jalapeno Ale Gazpacho- Fresh tomatoes, tomatillos, cucumbers, jalapenos and onions combined with our Jalapeno ale for a refreshing cold summer soup. Garnished with crema fresca and tortilla strips.

Bavette Steak. 2 versions of this steak. 1. Marinated in jalapeno ale with fresh jalapenos, ancho chili powder and cumin. Broiled and served with a hopped chipotle honey. 2. Marinated in blood orange ale with fresh herbs from the chefs garden and oranges. Broiled garnished with broiled orange slices and blood orange balsamic reduction.
Huckleberry BBQ Chicken.
Cashew Chicken- Bread in a spent grain flour cashew mix. Pan seared and topped with a mango goji berry salsa. Server with forbidden rice and chef's vegetables.
Salmon Steak- Fresh Salmon cut into steaks and marinated in blood orange ale with select seasonings and spices. Broiled and laced with a blood orange balsamic reduction.
Tuna- Dusted in seasoned rice flour and seared in cast iron pans, topped with a tropical pineapple, papaya and mango salsa. Served with forbidden rice and chef's vegetables.
Shrimp and Sausage Gumbo- Big Brick Brown infused shrimp stock, brown roux, okra, shrimp and jalapeno sausage on a bed of farro.
Turkey Meatball Spaghetti.
Chorizo tri color tortellini- Chorizo, roasted corn, black beans, peppers, and cream on a bed of tricolor tortellini. Garnished with cojita cheese, blood orange balsamic, diced tomatoes and green onions.
